Custom Cut Side of Beef - DEPOSIT ONLY

Our high-quality, 100% Grass Fed & Finished, fully fattened, Custom Cut Sides of Beef generally hang around 300-400 pounds. The full price of your side of beef is based on the hang weight of the individual side, which is then cut to your customizable specifications.

Based on a 300 pound hanging weight, you’ll get back about 190-215 pounds of locally butchered, vacuum-sealed and labeled beef, about 5 or 6 boxes measuring 12 x 18 x 8-inches.

Depending on how you build your personalized cut sheet, the breakdown of sides of beef are roughly 30% roasts, ribs, short ribs, bone-in shank, brisket, 35% ground beef, stew and kabob packs; and 35% steaks and premium cuts. You also have the option to take any soup bones, suet (leaf fat), or organ meats back with your side.

At $6 per hang weight pound, a 300-pound side priced at $1800 means about 190-215 pounds of beef customized into your favorite cuts at about $8.00-$10.00 per pound. (To compare, most beef sold at the supermarket tends to be in the $8 to $12 range for cuts like ground beef and chuck steaks and in the $12 to $40 dollar range for cuts like strip steaks, T-bone, and ribeye).

WHAT IS THE TURNAROUND TIME ON A CUSTOM CUT SIDE OF BEEF?

We harvest beef once per month, so turnaround time depends on our processing date that month. Generally, please expect about 2-5 weeks turnaround on Custom Cut Sides.

HOW MUCH FREEZER SPACE DO I NEED?

Plan on about 1 cubic foot of freezer space per 30-40 pounds of frozen, boxed beef. For a Custom Cut Side of Beef, we recommend at least 6 cubic feet of freezer space.

HOW LONG DOES FROZEN BEEF LAST?

According to the USDA, frozen beef is safe indefinitely. We recommend eating within 12 months.

HOW DO I CHOOSE CUTS ON CUSTOM CUT SIDE OF BEEF?
